Vegan Chocolate Peanut Butter Granola (Vegan, Dairy-Free)
As delicious as granola is, it can sometimes be hard to find a store-bought version that’s vegan. Often, the kinds you find at the store contain honey or dairy ingredients, which unfortunately makes them unsuitable for those looking to avoid animal products.
The great part about making your own granola is that you have total control of what goes into it (and what doesn’t). You can also make it any flavor you like, such as pumpkin spice or even chocolate peanut butter, which I’ll show you how to make today.
Making granola from scratch is actually really easy. It takes less than an hour to make, with minimal effort and hands-on time. I’m sure I’m not the first to say this, but it almost makes more sense to make it yourself than to buy it, that’s how simple it is to do.
Peanut butter and chocolate is one of my favorite flavor combinations, and I’m definitely not alone. That’s why I chose to make this flavor as my first attempt at diving into homemade granola. I think it came out rather well!
Although this granola is definitely delicious just by the handful, it also goes great with vegan yogurt. It’s a great way to add some protein and other nutrients to your morning parfait-and have it taste like dessert while doing so.
Vegan Chocolate Peanut Butter Granola
Ingredients
- 2 tbsp coconut oil melted
- 3 tbsp maple syrup
- 2 tbsp creamy peanut butter
- good pinch of salt
- 1 tsp vanilla extract
- 1 cup rolled oats
- 1/3 cup peanuts chopped
- 2 tsp cocoa powder
- 1/4 cup vegan chocolate chips
Instructions
- Preheat oven to 300F. Line a baking sheet with parchment paper and set aside.
- In a large bowl, mix together the coconut oil, maple syrup, peanut butter, salt and vanilla.
- Add oats, peanuts and cocoa to the peanut butter mixture and stir to coat.
- Spread oat mixture onto the baking sheet in a thin single layer. Bake for 10-15 minutes, or until lightly golden brown. Do not burn.
- Cool for 10-20 minutes (it should have started to harden a bit). Transfer granola to a bowl and break up into smaller pieces. Add chocolate chips and toss.
- Store in a ziploc bag. Use in parfaits, granola bars, or eat on its own as a snack. Whatever you like!
