It can often be hard to shop inexpensively as a vegan (especially in this economy…) But the good news is that, with a little ingenuity and a little research, we can come up with some great vegan meals on the cheap.
The last thing you want to do when the weather is hot and sticky is turn on the oven; why would you want something adding extra heat to the house?
This is the fourth installment of this series, where I give some of my favorite and easiest mental health meals for days when it’s harder for you to cook, days when you’re on the run and need something quick, and everything in between.
This dish is inspired by one of my favorite things to get at my favorite restaurant: vegan pizza topped with eggplant. I love oven-fried (and even regularly fried) eggplant, and it charts right up there with some of my favorite pizza toppings.
One of my first posts on this website was for a veganized version of my mom’s Chicken and Peppers. It was a crowd-pleasing favorite from my childhood, but the vegan version is just as good.
