Perfect for a light snack, to eat with yogurt, or whatever you want. This granola is delicious and chocolatey, and super easy to make! It's also honey and dairy-free, therefore suitable for vegans and others wishing to avoid these ingredients.
Preheat oven to 300F. Line a baking sheet with parchment paper and set aside.
In a large bowl, mix together the coconut oil, maple syrup, peanut butter, salt and vanilla.
Add oats, peanuts and cocoa to the peanut butter mixture and stir to coat.
Spread oat mixture onto the baking sheet in a thin single layer. Bake for 10-15 minutes, or until lightly golden brown. Do not burn.
Cool for 10-20 minutes (it should have started to harden a bit). Transfer granola to a bowl and break up into smaller pieces. Add chocolate chips and toss.
Store in a ziploc bag. Use in parfaits, granola bars, or eat on its own as a snack. Whatever you like!
