I’ll admit, I usually have a go-to combo when I make tofu scramble: sauteed peppers and onions. And while that’s definitely a winning combo, having the same thing can get kind of monotonous after a while.

I’m not exactly sure why I thought of broccoli, as opposed to any other vegetable–and I’m probably not the first. But it turns out broccoli in tofu scramble is a delicious and perfect change of pace!

The trick of this recipe is to make sure you break your broccoli up small enough. Since your tofu will be quite small once you crumble it, you wouldn’t want to have big broccoli florets flying at your face, would you? So cutting the broccoli into thumb-sized florets is probably a good rule of thumb (literally).

This recipe makes enough for two hearty servings. You can eat it as-is, or serve it on a wrap. You could even eat it on a breakfast sandwich, which you can do by melting vegan cheese into it so it holds together.

How To Make It

Not only is this recipe easy to make, but it also whips up fairly quickly since you can make two parts of it simultaneously. First, you’ll crumble your tofu on a lined baking sheet, so it’s all ready when it’s time to broil.

You’ll chop the broccoli into thumb-sized florets, then saute it in a bit of oil with fresh, minced garlic until soft.

In the meanwhile, you’ll broil your tofu for 15-20 minutes, or until it starts to turn golden. You’ll add the tofu to the broccoli, season everything with cheesy nutritional yeast, and you’re done!

Enjoy this healthy, delicious, and simple scramble on a wrap, bagel, or english muffin. Or as is!

Enjoy this delicious scramble on toast, in a wrap, or just as-is! It has nutritious broccoli, protein-packed tofu, and a punch of garlic to bump up the flavor. Season however you like, or just keep it simple!

Equipment

  • Parchment paper

Ingredients
  

  • 1 14 oz block firm tofu drained
  • 2 tbsp olive oil
  • 7 garlic cloves minced
  • 1 bunch broccoli, roughly 3 cups washed and cut into thumb-sized florets
  • 2 tbsp nutritional yeast
  • salt and pepper, to taste

Instructions
 

  • Line a rimmed baking sheet with parchment paper. Crumble the block of drained tofu on the lined baking sheet in small pieces. Set aside for now. Note: you will be using the broiler of your oven for this recipe.
  • Add oil to a medium skillet on medium heat. Add garlic and cook 1-2 minutes, until fragrant. Add broccoli florets and stir. Cook 15-20 minutes or until soft, stirring often.
  • While the broccoli cooks, broil the crumbled tofu on the high setting for 15-20 minutes. Keep a close eye and give it a toss halfway through cooking time. You will want the tofu to be starting to turn golden brown but not burnt, and still a little soft.
  • Add the cooked tofu to the broccoli skillet. Season with nutritional yeast, then salt and pepper to taste. Serve with toast, as a breakfast wrap, or whatever you'd like!
