The Best Summer Side Dish! Italian Style Cucumber Salad
Cucumber is such a fresh, crisp ingredient. Perfect for summer, and sometimes regretfully underused in my kitchen.
But recently, I’ve discovered more of an appreciation for the cooling crunch of cucumber–and of cucumber salad.
I would say that cucumber is the star of this dish, and it very much is. But it shares the spotlight with a special ingredient known as Miyoko’s mozzerella.
Miyoko’s is a great brand of vegan cheese, and their mozzarella is no exception.
If you haven’t tried Miyoko’s mozzarella yet, I would highly recommend it! This salad is incomplete without it.
It’s creamy, rich flavor balances out the tang of the Italian salad dressing used in this recipe, allowing for a delicious and creamy balance of flavors.
Serve this salad as a side dish at your next weekend barbecue, or have it as a weeknight dinner after a scorching summer day.
I swear it’s so good. And for how easy it is to make, I definitely see myself making this very often throughout the summer months. I hope you love it as much as I did!
Italian Style Cucumber Salad
Ingredients
- 2 medium cucumbers (thinly sliced)
- 1 medium red onion (thinly sliced)
- 8 ounces vegan mozzarella, cubed (I used Miyoko's)
- 2 tsp Italian seasoning
- 1/2 cup Italian dressing (I used Wishbone Robusto Italian)
Instructions
- Add all ingredients to a large bowl and toss gently to coat with dressing. Serve and enjoy! Serve it as an appetizer, or as a side dish/side salad aside a main. This salad tastes best within the first couple days of being made.
