The Easiest Mental Health Meals For Harder Days (Part 4)

This is the fourth installment of this series, where I give some of my favorite and easiest mental health meals for days when it’s harder for you to cook, days when you’re on the run and need something quick, and everything in between.
I believe that food should be accessible for everyone, and this is just one of the ways that I like to help make it more accessible for you.

And without further ado, let’s get into some of the easiest mental health meals you can make right now with minimal effort.

1. Microwaveable dumplings
The dumplings pictured (from Weis) are one of my favorite brands. They’re really easy to prepare too, with a microwave option (microwave in a little water, covered, for 2 minutes). I like to enjoy them with sriracha or vegan Buldak sauce.
2. Rice cups
My favorite ones to use are the Minute Rice rice cups. They’re ready in and out of the microwave in just 60 seconds, so very little hands-on prep.
Serve them with a veggie (such as the steam-in-bag type) and some sauce you like (teriyaki is a good choice) and you have yourself a mini meal that took less than 5 minutes to prepare.

3. Frozen waffles
These are great for mornings on-the-run (or low-energy mornings) when you need a meal quickly. Just pop them in the toaster for a few minutes, serve with some syrup (and/or berries if desired), and voila.
4. Microwave nachos
Perhaps not my original idea, but a classic nonetheless. Just add tortilla chips to a plate, top with toppings (such as vegan cheese shreds, salsa, canned beans, jalapeño slices, or whatever else you like) and microwave until the cheese melts. Instant lunch!

5. Fruit pouches or pre-sliced fruit
This one is great for getting some nutrients (such as fiber, vitamins and minerals) in a convenient fashion. I like these fruit pouches (found at the dollar store!) as well as the GoGo Squeez ones. Most grocers also sell pre-sliced fruit, such as watermelon and pineapple that you can enjoy.
6. Canned vegetarian beans
These are a longstanding favorite of mine. I usually like to enjoy them with some plant-based hot dogs, but they are just as good on their own. Many canned vegetarian beans have microwave directions, making them more convenient for days you don’t want to stand over the stove.
