How To Make Vegan Freezer Prep Breakfast Sandwiches

I often meal prep breakfast sandwiches for the freezer, mainly because it greatly simplifies things for me in the morning.

Meal prepping breakfast sandwiches is actually super easy to do, and today I’m going to show you how I do it (and use up some odds and ends while I’m at it).

Let’s start with ingredients:

The Ingredients

For the breakfast sandwiches that I make, I typically use four types of ingredients:

  • a bread (could be English muffins, sourdough, rolls, whatever you have)
  • a potato (I’ve used leftover frozen fries, tater tots, hash browns, etc)
  • a vegan meat replacement (such as vegan ham, impossible ground sausage or beef, or link sausages)
  • a vegan cheese replacement (this time, I’m using Follow Your Heart pepper jack)

The Prep

The best place to start is with the potato element, because it will likely take the longest. Air-fry or bake your potato element according to the package directions.

Meanwhile, we’ll prepare the vegan meat. Depending on what option you choose, the prep will be different. Today, we are making vegan sausage patties.

Start by (if frozen) thawing your vegan sausage. Open it into a bowl, then season as desired.

I used MSG, paprika, onion powder, garlic powder and ground pepper. Some other nice options here are sage, seasoned salt, and nutritional yeast.

I shaped the vegan sausage into 12 patties, then pan-fried until crisp on both sides and cooked through.

Once both the vegan sausages and the tater tots were fully cooked, it was time to assemble my breakfast sandwiches.

I had enough to put 5 tater tots on each sandwich, as well as two vegan sausage patties. I used one slice of vegan pepper jack on each sandwich, but two can be used if you prefer.

I typically wrap my freezer-prep breakfast sandwiches in aluminum foil, which slows freezer burn.

The Sandwiches

Today’s prep yielded me 6 vegan breakfast sandwiches, perfect for freezer meal prep!

To reheat, simply take a frozen sandwich and wrap it in a sheet of moistened paper towel. Microwave for 2-3 minutes, depending on your microwave’s power level.

Flipping the sandwich halfway through cook time may help with bread texture.
