Enjoy this delicious scramble on toast, in a wrap, or just as-is! It has nutritious broccoli, protein-packed tofu, and a punch of garlic to bump up the flavor. Season however you like, or just keep it simple!
1bunchbroccoli, roughly 3 cupswashed and cut into thumb-sized florets
2tbspnutritional yeast
salt and pepper, to taste
Instructions
Line a rimmed baking sheet with parchment paper. Crumble the block of drained tofu on the lined baking sheet in small pieces. Set aside for now. Note: you will be using the broiler of your oven for this recipe.
Add oil to a medium skillet on medium heat. Add garlic and cook 1-2 minutes, until fragrant. Add broccoli florets and stir. Cook 15-20 minutes or until soft, stirring often.
While the broccoli cooks, broil the crumbled tofu on the high setting for 15-20 minutes. Keep a close eye and give it a toss halfway through cooking time. You will want the tofu to be starting to turn golden brown but not burnt, and still a little soft.
Add the cooked tofu to the broccoli skillet. Season with nutritional yeast, then salt and pepper to taste. Serve with toast, as a breakfast wrap, or whatever you'd like!
