Perhaps you’ve noticed the “nice cream” trend and thought to yourself, why on earth would people try to make ice cream out of a fruit?

And it’s a valid question. Even as a vegan, you can find countless vegan ice cream varieties; it’s as simple as getting in your car and driving to the nearest grocery store.

So why the bananas?

Well, for one, making ice cream out of bananas enables you to eat much more of it while simultaneously feeling less guilty about it. And if you know me, I’m all for great portion sizes.

Why would I care about having more of something if it’s not any good?

Now hold it right there. It may be plain to taste that it is not exactly like ice cream, but that doesn’t make it any less delicious! If you’ve never made banana nice cream before, you will most likely be blown away by the creamy texture and pleasant flavor.

Aside from the notorious potassium boost, you would also be getting a serving of fruit and eating a dessert at the same time. Seems like a win-win to me.

Alright, I’m sold. But how the hell do I turn a banana into a bowl of ice cream, anyway?

I thought you’d never ask!

Banana Nice Cream Sundae

Equipment

  • Small cutting board
  • Rimmed baking sheet
  • High-speed blender (such as a Nutribullet or Vitamix)

Ingredients
  

  • 2 ripe bananas small or medium
  • 2-4 tbsp non-dairy milk of choice
  • vegan whipped cream to serve
  • 1-2 tbsp peanut butter to serve

Instructions
 

  • Do this step the night before you want to have your ice cream: First, remove and discard the banana peels. Then, slice your bananas into slices about 1/2 inch thick. For best results, lay the slices in a flat layer on a rimmed sheet to freeze, so as to prevent them from freezing in a clump. You'll want to freeze them at least overnight, until solid and hard to the touch. After they are frozen solid, you can use a metal spatula to transfer them from the tray to a plastic freezer bag to keep them fresh until you are ready to make ice cream.
  • When it's ice cream time: Start by adding your banana slices to your blender. If you're using a Vitamix, you can add your non-dairy milk while the blender is running and blend it until smooth (you may not need all the milk). If using a Nutribullet, start with 2 tbsp of non-dairy milk and pulse it until it begins to resemble soft serve. If it seems to be giving you trouble, go ahead and add the other 2 tbsp. Whatever blender you use, you'll want to blend until it's nice and smooth, which may involve scraping down the sides of your blender once or twice.
  • If using peanut butter to top, just add the peanut butter to a small microwave-safe dish and microwave it for 10-20 seconds, stirring after 10 seconds. It should be soupy and thin, ready for drizzling!
  • Transfer banana nice cream to your favorite serving bowl, topping with a few squirts of vegan whipped cream and a drizzle of melted peanut butter. Enjoy!

Notes

  • Ripe bananas are best in this recipe. If you only have bananas on the greener side, it will probably still work but it may have an effect on the flavor of your nice cream.
  • Feel free to personalize the toppings you use. You could use rainbow sprinkles, chocolate shavings, maraschino cherries, strawberry sauce or even Oreo cookie crumbles! You could even have a banana-ception by making a banana split with banana nice cream.
