Start The Day Right With These High-Protein Vegan Pancakes

Some people tend to think that vegans have a harder time getting protein. And while that may be true in some cases, it’s certainly not true in all.

There are so many easy and simple ways to get your protein in throughout the day as a vegan!

One such way is these ridiculously easy-to-make protein pancakes. There’s a secret ingredient to these that’s already very grab-and-go friendly: non-dairy protein shakes!

Believe it or not, yes, you can replace the liquid in typical pancakes with a protein shake and end up with beautiful, tender pancakes.

It’s so simple and yet, I never thought about it until recently. It’s amazing how an easy swap can add 20 grams of protein to your breakfast!

A really great perk of this recipe is the flavor flexibility. I tried this with three different flavors of three different brands of protein shake, and they all came out just as I’d hoped: delicious, fluffy pancakes with notes of the protein shake’s flavor itself.

This recipe works as a serving for one or for two servings, depending on how hungry you are. I was able to level the whole recipe by myself, but I was also pretty hungry. It makes roughly 8-10 pancakes, depending on what size you make them.

If you have time to make regular pancakes, you have time to make these protein pancakes. No extra prepwork, yet an absolute gain in terms of plant-based protein!

High-Protein Vegan Pancakes For One

These protein-packed plant-based pancakes are just as simple as regular pancakes are to whip up, yet with a significantly higher punch of protein! Use any flavor of plant-based protein you like, and serve with fresh fruit and/or chocolate chips if you prefer.

Equipment

  • canola or olive oil cooking spray

Ingredients
  

  • 1 cup all-purpose flour
  • 1 1/2 tsp baking powder
  • 1 tbsp granulated sugar
  • pinch of salt
  • 1/4 cup Just Egg vegan egg replacer
  • 1 tbsp vanilla extract (I used imitation)
  • 1 cup plant-based protein shake of choice
  • desired pancake toppings, such as chocolate chips, fresh fruit, and syrup

Instructions
 

  • In a medium bowl, add the flour, baking powder, sugar and salt. Whisk to combine.
  • Create a well in the middle of the dry ingredients. Add the Just Egg, vanilla extract, and protein shake of choice. Whisk well until smooth. Set aside for 5-10 minutes, until a few bubbles start to form on the surface.
  • In the meantime, heat a skillet on medium-low heat. Spray lightly with cooking spray. You can make pancakes of desired size, but I used a scant 1/4 cup of batter for each pancake. Spoon pancake batter into pan and use a circular motion to create even-surfaced batter circles. Allow to cook for 2 minutes on each side, until golden.
  • Remove pancakes to a plate, and top with desired pancake toppings. Enjoy!
