Gluten Free Vegan Crumb Cake With Cream Cheese Streusel
Crumb cake should be for everyone, and today it will be! Whether your diet is vegan, gluten-free, dairy-free, or nut-free, this recipe is suitable for you.
The star of this recipe, chickpea flour, is an incredibly versatile ingredient and can be used to make vegan omelettes, pancakes, falafel, and today: delicious crumb cake.
It took a few tries for me to get the crumb just right, but I was finally able to and it is fantastic. My recipe makes an ample amount to top your cake with–and come on, who says no to more crumb topping?
This recipe is prepared in three parts: first the crumb cake batter, then the crumb topping, and then the cream cheese streusel drizzle. It’s actually pretty easy to make, and is the perfect pairing with your favorite cup of tea or a glass of non-dairy milk.

Vegan Gluten-Free Microwave Crumb Cake
Equipment
- Mug
Ingredients
- cooking spray or drizzle of oil
Cake
- 1/3 cup chickpea flour
- 2 tsp stevia
- 1/4 tsp baking powder
- 1/2 tsp cinnamon
- 1/2 tsp vanilla extract
- 1/4 cup non-dairy milk of choice
- 1 tbsp vegan butter softened
- pinch of salt
Crumb Topping:
- 1 tsp vegan butter
- 1 tbsp chickpea flour
- 1 tbsp brown sugar packed
- 1/4 tsp cinnamon
- pinch of salt
Streusel Drizzle:
- 1 tbsp vegan cream cheese I used Tofutti
- 1 tbsp powdered sugar
- 1/2 tsp vanilla extract
- 1 tsp non-dairy milk of choice
Instructions
- Lightly and evenly spray in your mug with the cooking spray to prevent sticking. Set aside for now.
- Using ingredients for the cake: In a small bowl, mix together the chickpea flour, stevia, baking powder, cinnamon, vanilla, non-dairy milk, vegan butter and pinch of salt until well combined.
- Using ingredients for crumble topping: In a separate small bowl, add the vegan butter, chickpea flour, brown sugar, cinnamon and pinch of salt and mash together with a fork until it resembles crumble. It might look like a lot of flour at first, but I promise it will come together.
- Using ingredients for the streusel drizzle: In a small bowl, whisk the vegan cream cheese, powdered sugar, vanilla and non-dairy milk until completely smooth. Set aside until after the cake is cooked.
- Pour the cake batter into your mug, leveling the top with the back of a spoon. Use your fingers to crumble the crumble topping on top, being sure to cover the entire surface with crumble.
- Microwave for 1-1:30 minutes, until a toothpick stuck in the center comes out clean.
- Top cake with drizzle, using a spoon or a piping bag. Enjoy with a glass of non-dairy milk!
