There’s something a bit nostalgic about pumpkin pie. One of the first things that comes to my mind when I think about Thanksgiving–besides a hearty plate of delicious leftovers–is pumpkin pie. It’s comforting, sweet and has all the flavors of fall.

But we don’t have to wait for November to get a taste of it, and it doesn’t have to take hours either. Not that this recipe in any way claims to be an exact replica of a pumpkin pie–it simply tastes damn close enough to be satisfying.

Not to mention that this smoothie is actually pretty healthy. It has pumpkin puree and banana, which is great for a fiber and potassium boost. Sweetening the smoothie with maple syrup adds another subtle layer of seasonal flavor. And a topping of non-dairy whipped cream makes this drink all the more decadent.

Just don’t be surprised if you end up having to share!

Equipment

  • High-speed blender

Ingredients
  

  • 1/2 cup canned pumpkin puree NOT pie mix, just plain pumpkin
  • 1 medium banana frozen
  • 1 cup almond milk or other non-dairy milk
  • 1 tbsp maple syrup
  • 1 tsp pumpkin pie spice
  • 1/2 cup ice
  • non-dairy whipped cream such as almond or coconut
  • dust of cinnamon for garnish

Instructions
 

  • Add pumpkin, banana, almond milk, maple syrup, pumpkin pie spice and ice to blender. Blend until smooth.
  • Pour into your favorite glass, garnishing with non-dairy whipped cream and a dusting of cinnamon. Enjoy!

Notes

If you want to make a coffee-infused variation of this, add 1 tablespoon (or 1-2 teaspoons for a more dialed-back version) of instant coffee before blending. In addition to this, you can also freeze brewed coffee into ice cubes and add 1/2 cup of them to the smoothie instead of regular ice cubes.
