Quick Barbecue Side Dish: $6.45 Cucumber Salad

Summer is the perfect time for crisp, refreshing cucumber, and what better way to have it but in a cucumber salad?
Today’s recipe is also budget-friendly, in that it will only cost $6.45 to make (spices included!).
Cost-efficient recipes are some of my favorite to come up with, because I feel like many of us are in need of such recipes these days.
The Ingredients


The ingredient list is pretty simple: cucumbers (the biggest you can find of non-organic cucumbers), green onions, Italian salad dressing, and this “Everyday Hero” seasoning mix I found at Aldi.

Super simple ingredients, all of which came to a total of just $6.45. Not bad, I’d say! How much this salad serves will have to do with the size of cucumbers you can find.
The Prep


An important note about peeling the cucumbers: with the recent cyclospora outbreak, I would veer toward washing and peeling the cucumber. In normal circumstances, I would just wash it and leave it unpeeled. Just a fair warning!


I opted for green onions (scallions) in today’s recipe, because they are a significantly cheaper way to add some nice onion flavor to the dish. This pack of green onions was just $1.05, and you can use as much or as little as you prefer.


Next, you’ll add the Italian salad dressing and Everyday Hero spice mix to taste, and toss well. You will likely have some leftover to use in another dish!
The Final Dish


The completed dish is an oniony, tangy and crisp salad that you can bring to any barbecue or cookout.
Again, the amount of servings you get is highly dependent on the size of the cucumbers you find.
But I would estimate, if everyone took a little on the side of their plate, it would serve about 6-8 people.
