There really isn’t anything like a gooey, chocolate brownie with whipped cream or ice cream. It is a warm, delicious treat that is well-enjoyed and well-loved by many.

If you have read my post on how to easily veganize boxed brownie mix–which happens to be one of my most popular posts to date–you know that the exclusion of eggs and dairy does not mean you have to miss out on delicious brownies.

But now I’m here to make things even easier for you.

Perhaps you don’t feel like going through the trouble of making a big pan of brownies (and then washing the pan later).

Or you want a personal-sized treat that won’t take an hour in the oven.

The good news is that this is totally possible. This mug of fudgy goodness will go from being ingredients to brownie in less than five minutes, will taste just as delicious, and you won’t have to scrub an 8×8 pan later.

This is another reason why mug food is so great. It’s compatible with anyone with a microwave, is so much quicker to make, and often comes out just as good as its original counterparts.

Easiest Peanut Butter Brownie In A Mug (Vegan, Dairy-Free)

This recipe is for when you want a delicious, comforting brownie–without most of the work or wait time. It combines two of arguably the best things in existence, peanut butter and chocolate, and pairs wonderfully with a scoop of your fave dairy-free ice cream.

Equipment

  • microwave-safe mug (at least 8 ounces)
  • cake tester or toothpick

Ingredients
  

  • cooking spray
  • 1/3 cup vegan brownie mix I used Duncan Hines Chewy Fudge
  • 2 tbsp oil (I tested once with canola oil and once with melted coconut oil)
  • 3 tbsp Just Egg
  • 1 tsp vanilla extract
  • 1 tbsp vegan chocolate chips
  • 1 tbsp creamy peanut butter melted
  • vegan ice cream or whipped cream to serve

Instructions
 

  • Spray mug lightly with a quick mist of cooking spray. Set aside for now.
  • In a small bowl, stir brownie mix, oil, Just Egg, and vanilla extract until combined. Fold in chocolate chips. Pour mixture into mug using a rubber spatula. Smooth out the top of the brownie with the spatula, if necessary.
  • Drizzle melted peanut butter on top of the batter in circles, using a cake tester to lightly swirl it into the top of the batter.
  • Microwave for 60 to 90 seconds, testing with a cake tester to check for doneness at the 60 second mark. Microwave ovens vary, but you want the cake tester to come out clean. Be sure you are testing just the brownie, because the peanut butter might still be wet when the brownie itself is actually done.
  • Serve with a scoop of your favorite vegan ice cream on top, or a spritz of vegan whipped cream. Enjoy!

Notes

My microwave is a 1200 watt microwave, but I know that microwave ovens (and therefore cook times) do vary. The best practice is just to check it with a cake tester at the 60 second mark, and watch it closely to make sure you don’t overcook it.
