Easiest Peanut Butter Brownie In A Mug (Vegan, Dairy-Free)
This recipe is for when you want a delicious, comforting brownie--without most of the work or wait time. It combines two of arguably the best things in existence, peanut butter and chocolate, and pairs wonderfully with a scoop of your fave dairy-free ice cream.
1/3cupvegan brownie mixI used Duncan Hines Chewy Fudge
2tbspoil(I tested once with canola oil and once with melted coconut oil)
3tbspJust Egg
1tspvanilla extract
1tbspvegan chocolate chips
1tbspcreamy peanut buttermelted
vegan ice cream or whipped creamto serve
Instructions
Spray mug lightly with a quick mist of cooking spray. Set aside for now.
In a small bowl, stir brownie mix, oil, Just Egg, and vanilla extract until combined. Fold in chocolate chips. Pour mixture into mug using a rubber spatula. Smooth out the top of the brownie with the spatula, if necessary.
Drizzle melted peanut butter on top of the batter in circles, using a cake tester to lightly swirl it into the top of the batter.
Microwave for 60 to 90 seconds, testing with a cake tester to check for doneness at the 60 second mark. Microwave ovens vary, but you want the cake tester to come out clean. Be sure you are testing just the brownie, because the peanut butter might still be wet when the brownie itself is actually done.
Serve with a scoop of your favorite vegan ice cream on top, or a spritz of vegan whipped cream. Enjoy!
Notes
My microwave is a 1200 watt microwave, but I know that microwave ovens (and therefore cook times) do vary. The best practice is just to check it with a cake tester at the 60 second mark, and watch it closely to make sure you don't overcook it.
