I admit, before a few weeks ago I hadn’t exactly been clued in as to what the big deal was with shamrock shakes.

All I really knew was that people talked about them a lot this time of year and, well, I couldn’t have them–unless I made one myself, of course.

Well recently, I finally broke and took on the challenge of making a vegan shamrock shake. And after a few attempts–not all of which were successful–I happened upon a recipe I really quite liked.

There are a few things you should know when making this shake, not the least of which would be to be cautious of how long you blend it.

In fact, all you really need to do is pulse it a few times–blending it any more than that resulted in a shake that was a little too watery for my taste.

Another important tip involves the ice cream you use. My mint chip ice cream had pretty big chocolate chunks that lead to a color separation of the final product.

My tip would be to avoid the chocolate chunks as best you can when measuring your ice cream–or just use vanilla, but you’ll probably have to add some more peppermint extract to the shake to get what you’re looking for.

Without further ado, here’s how to make it!

Vegan Shamrock Shake

Shamrock shakes seem to become pretty popular around St. Patrick's Day, and being vegan doesn't have to mean you'll get left out of the fun. Read on to learn how to make an easy, one serving shamrock shake.

Equipment

  • Blender

Ingredients
  

  • 1 cup vegan mint chocolate chip ice cream *see notes* can also use vanilla
  • 1/2 cup oatmilk or other non-dairy milk of choice
  • 2-3 drops vegan green food coloring such as Wilton or Americolor
  • 1/8 tsp peppermint extract or more to taste
  • vegan whipped cream and chocolate chips for garnish

Instructions
 

  • Add the vegan ice cream, oatmilk, green food coloring and peppermint extract to the pitcher of your blender. Pulse the ingredients using 1-2 second pulses until just blended–do not blend full speed as this results in a more watery shake.
  • Pour shake into a glass and garnish with vegan whipped cream and chocolate chips. Enjoy!

Notes

When measuring out your mint chocolate chip ice cream, make sure to avoid the chocolate chips as best you can. Blending the chips into the drink resulted in some color separation, which while still tasty is less visually pleasing.
You can also just use vanilla ice cream, but be advised you may need to add more peppermint extract to compensate.
