Shamrock shakes seem to become pretty popular around St. Patrick's Day, and being vegan doesn't have to mean you'll get left out of the fun. Read on to learn how to make an easy, one serving shamrock shake.
1cupvegan mint chocolate chip ice cream *see notes*can also use vanilla
1/2cupoatmilkor other non-dairy milk of choice
2-3dropsvegan green food coloringsuch as Wilton or Americolor
1/8tsppeppermint extractor more to taste
vegan whipped cream and chocolate chipsfor garnish
Instructions
Add the vegan ice cream, oatmilk, green food coloring and peppermint extract to the pitcher of your blender. Pulse the ingredients using 1-2 second pulses until just blended--do not blend full speed as this results in a more watery shake.
Pour shake into a glass and garnish with vegan whipped cream and chocolate chips. Enjoy!
Notes
When measuring out your mint chocolate chip ice cream, make sure to avoid the chocolate chips as best you can. Blending the chips into the drink resulted in some color separation, which while still tasty is less visually pleasing.You can also just use vanilla ice cream, but be advised you may need to add more peppermint extract to compensate.
