5 Day Vegan Meal Plan To Enjoy The Flavors Of Fall
With October less than two weeks away, I am definitely becoming ecstatic about it. And I happen to be one of those people who will shamelessly pledge allegiance to “pumpkin spice everything.” Hell, the season only lasts from mid-September to the end of November; I’m gonna enjoy it while I can!
Which is why I compiled this autumn-inspired meal plan for you guys. This meal plan is for five days, and it includes some of my most autumn-y recipes. So there’s lots of cinnamon, lots of squash and lots of warm, cozy dishes.
Disclaimer: I’m not a nutritionist. This is more about flavors than anything else. Fill in the gaps where you see fit, such as including protein where you feel it necessary. And enjoy!
5 Day Vegan Fall-Inspired Meal Plan:
Monday/Wednesday meals:
Breakfast: Banana Bread Overnight Oats
Lunch: Butternut Squash Soup w/Whole Wheat Toast
Dinner: Balsamic Zucchini Boats w/Wild Rice
Tuesday/Thursday meals:
Breakfast: Pumpkin Bean Flour Muffins (replace the banana with 1/2 cup canned pumpkin puree, and the cinnamon with pumpkin pie spice)
Lunch: Roasted Brown Sugar Cinnamon Acorn Squash
Dinner: Comforting Baked Cauliflower & Cheeze
Friday meals:
Breakfast: Pumpkin Waffles w/Maple Syrup
Lunch: Kale salad with apples & walnuts, with a Maple Vinaigrette
Dinner: Vegan Shepherd’s Pie
I hope you like the meal ideas I put together here! If you don’t necessarily feel like following the plan to the letter, I at least hope it gave you some ideas!
I don’t know if I could even choose a favorite, but the Comforting Baked Cauliflower & Cheeze is definitely a classic. And the pumpkin waffles and Banana Bread Overnight Oats are also wonderful (especially for busier mornings).
