Break Free From Eggs: A Guide to Vegan Egg Substitutes for All Your Cooking Needs

If you’re a bit newer to a vegan lifestyle, you might be wondering what exactly could be used to substitute eggs in daily life applications. Things like the scrambled eggs you have for breakfast, or the egg you use to bind your favorite cookie dough, can actually easily be replaced with vegan substitutes.

As far as vegan egg substitutes go, there are some that are made specifically as an egg substitute, and some that just happen to work very well for the job. In this post, I’m going to go over some of my favorites that I use the most often.

Tofu

Tofu is one of the simplest and less expensive replacements for eggs you can find. Tofu scramble is an easy and protein-packed breakfast that I make on a regular basis. Season it well and serve it with toast for a delicious egg-like meal.

When I’m making tofu scramble, I also like to add peppers and onions to it while I’m cooking it to add some extra flavor, such as in my Cool Ranch Tofu Scramble recipe.

Just Egg

Just Egg is one of my favorite vegan products on the market right now. It can be used to make fabulous omelettes and scrambles, as well as be used in baking applications (I usually just use 3 tablespoons of Just Egg to replace each egg in a given recipe).

It’s also by far the most convenient item on this list, so if you’re more of an on-the-go type of person, you’ll probably vibe with it. You can learn more about it here.

Ground Flaxseed

Ground flaxseed is an omega-3-rich option that also seems to keep very well if stored in the refrigerator. That means you can keep it on hand and have it at the ready whenever you need to do some vegan baking.

Simply stir together 1 tablespoon of ground flaxseed and 3 tablespoons of water (replaces one egg). Set it aside for 5-10 minutes to gel up, then use it in your favorite baked goods.

Aquafaba

Aquafaba (aka the liquid from canned chickpeas) is last on this list but certainly not least. Something that would normally just get rinsed down the drain can be used as a great egg replacer.

What’s unique about aquafaba is that it can actually be used in place of egg whites to make vegan meringue. I’ve also used it to replace eggs in other baking applications, namely these 5 Ingredient Vegan Peanut Butter Cookies.


Eggs are really not hard at all to replace from a vegan standpoint. That being said, I hope you found this post helpful!
