Chickpeas are a popular vegan ingredient, and for good reason!

Not only are they a good source of protein and fiber, they’re also great in things like chickpea nuggets, hummus, even veganized omelettes (if you get your chickpeas in flour form, anyway).

Another awesome usage of the chickpea can be found in today’s recipe: chickpea salad.

Chickpeas offer a surprisingly delicious stand-in for the traditional tuna salad, which is good news for vegans and vegetarians alike.

This is also a pretty simple, make-ahead recipe: you chop a few veggies, mash some chickpeas, stir it around and spread it on toast. Boom, lunch is served!

You could even make the chickpea salad the night before, and just add it to your bread when you’re ready to enjoy it.

Just don’t forget to save your aquafaba! Aquafaba is a vegan miracle ingredient that would otherwise get rinsed down the drain.

There are countless things you can make with it, not the least of which is vegan mayonnaise (which this chickpea salad actually calls for, so… win-win!)

Vegan Chickpea Salad For One

This deliciously simple chickpea salad is the perfect weekday lunch! Tangy and creamy with just a little crunch, this is the perfect vegan swap for your typical tuna sandwich.

Ingredients
  

  • 1 cup canned chickpeas, drained and rinsed
  • 2 tbsp celery, diced small
  • 1 tbsp red onion, diced small
  • 1 tbsp dill pickle, diced small

Dressing

  • 3 tbsp vegan mayo
  • 1 tbsp dijon mustard
  • 1 tsp lemon juice
  • 1 tsp nutritional yeast
  • salt and pepper, to taste

Instructions
 

  • Mix the dressing ingredients together in a small bowl. Set aside for now.
  • In a medium bowl, add the chickpeas. Mash well with a fork until no whole beans remain, or to desired consistency.
  • Stir in the celery, red onion, and pickle. Add the dressing and stir to combine.
  • Enjoy on toasted bread, lettuce wraps, crackers, or however you'd like!
