Vegan Chickpea Salad For One

Ingredients

canned chickpeas, drained and rinsed

tbsp
celery, diced small

tbsp
red onion, diced small
1
tbsp
dill pickle, diced small
Dressing
3
tbsp
vegan mayo
1
tbsp
dijon mustard
1
tsp
lemon juice
1
tsp
nutritional yeast
salt and pepper, to taste
Instructions
Mix the dressing ingredients together in a small bowl. Set aside for now.
In a medium bowl, add the chickpeas. Mash well with a fork until no whole beans remain, or to desired consistency.
Stir in the celery, red onion, and pickle. Add the dressing and stir to combine.
Enjoy on toasted bread, lettuce wraps, crackers, or however you'd like!
