Vegan What I Eat In A Day: Comforting Vegan Dishes

I love making What I Eat In A Day posts, simply because I think it’s a great way to give and get ideas and meal inspiration!
I also like sharing some of the dishes I make, because I enjoy experimenting and getting creative in the kitchen.
Especially as a vegan, it can be hard to know what to cook sometimes. I’ve got your back! Check out this post, and remember there are several others like it in the What I Eat In A Day category. I hope you enjoy!


Breakfast: I took a stab at making some pumpkin bread, and it actually came out pretty good! I made it using spices such as cinnamon and nutmeg.
I toasted it a little before eating it, which I would say was a good move. I enjoyed it with an oat milk pumpkin spice iced latte.


Lunch: I had some leftover pesto from a YouTube video I made recently, so I used it up by making these cheesy pesto rolls.
For an added burst of flavor, I drizzled them with some balsamic glaze. I drank a tropical soda on the side, and had a few peanut chews for a sweet treat.

Afternoon snack: Me and my dad went to the movies (to see the new Spider-Man movie, which we both loved). I had some of their popcorn–they make it with coconut oil–and a Dr. Pepper.


Dinner: I had some leftover vegan alfredo pasta that I’d made the night before. I added some vegan chicken which I air-fried. The creamy sauce came together with ingredients like vegan cheese shreds and oatmilk.
I’ll have to do a post about this recipe alone sometime, because it was luscious, creamy and irresistible.
