Vegan What I Eat In A Day: Indulgent Summer Meals

Welcome back to another WIEIAD post! I get the feeling that these are pretty popular, so I intend to keep them coming.

Today’s meals were a little indulgent, and although I am on a health journey as of recently, I am all in for moderation and balance. So today involves just that!

I really enjoy making posts like this because I feel like it gives some great examples of what a vegan might eat on a random day, which may be found helpful by new and aspiring vegans.

Without further ado, here’s the day of meals:

Breakfast: I made some basic tofu scramble for a YouTube video, and since I had some leftover I had it for breakfast. In my fridge was some veggie bacon that I had on the side. My morning coffee was blonde roast with oatmilk caramel creamer.

Lunch: I was really craving some vegan cheesy ramen, so I made that for lunch. I also had some Weis plant-based dumplings on the side (my fave!) drizzled with buldak sauce (the accidentally vegan one) and plant-based mayo.

Afternoon snack: I had these Made Good granola bars that I believe I got at Grocery Outlet a little while back, so I had that as my sweet treat.

Dinner: I made my absolute favorite vegan ribs for dinner, which you can find the recipe for here. They are so good, I would highly recommend them. I also had some cucumber salad and some pasta salad on the side with them.

Evening snack: I had meal prepped this protein vegan chick’n dip earlier in the week, and so I decided to have some of it with some Spicy Sweet Chili Doritos (which are accidentally vegan!). A delicious and satisfying end to the day.


And that’s the day of meals! A bit more indulgent than I would usually eat, but sometimes you have to do that every now and then (like I mentioned earlier, moderation!)
