What a Vegan Eats In a Day: From-Scratch Meals

Welcome back to another What I Eat In a Day post! I love making these posts to give you some meal and recipe inspiration.
I’ve done a lot of cooking from scratch lately, and today’s set of meals will reflect that.
Not everyone has time to cook from scratch all the time, and that’s okay! I have a lot of easy and time-conscious recipes on my website as well.
But without further ado, let’s get into the day’s meals:


Breakfast: I often like to make freezer-friendly breakfast sandwiches, building them with whatever I happen to have on hand.
The bread of these sandwiches was sourdough my sister gave me.
I also had some vegan ham and seasoned french fries, so those were the components of the sandwich (along with some vegan cheese).
I had some vegan donut holes on the side with some pumpkin spice black tea.


Lunch: I tasted a few dishes for a YouTube video I was making (such as lentil nuggets and red velvet banana bread). I also made this gnocchi from scratch with some potatoes I had.
The sauce was a sort of “vodka” sauce without the vodka–really good actually. I topped it with some pesto and nutritional yeast.

Dinner: I had some leftover lentil french onion soup (you can find the recipe here). It’s actually a relatively inexpensive dish, and perfect for Fall.
I got the (adorable!) pumpkin dish at the thrift store 🙂


Evening snack: I had some leftover cheese sauce (made in part with sweet potato) that I enjoyed with some tortilla chips and a drizzle of hot sauce. On the side, I had a nice cold glass of diet birch beer.
