Easy Chocolate Chip Pancakes For Two (Vegan, Dairy-Free, Egg-Free)
With Valentine’s Day coming up very soon, those of us with significant others are gearing up for the 14th and making plans to enjoy the evening, whether that means going out for a meal, staying in to cook together, or planning a fun activity to do as a couple.
But a possibly overlooked idea is sharing breakfast in bed together, which could be the perfect way to kick off the romance for the day.
This recipe for chocolate chip pancakes makes enough for two people, making it the perfect breakfast to make for you and your honey on Valentine’s Day-or any day!
Because honestly, who doesn’t love pancakes? Besides, making things for your significant other (be it cooking food, crocheting them something, writing them a poem, etc.) is a simple but also incredibly thoughtful way to show them you care.
Chocolate is heavily associated with Valentine’s Day, which is another reason this is a perfect treat for the occasion. Make your pancakes even more festive by making them heart-shaped using a metal heart cookie cutter.
If you’d rather keep it simple, these pancakes are still the perfect romantic breakfast as normal-shaped pancakes. Actually, pancakes of any shape can be romantic, as long as you’re sharing them with your special person 🙂

Vegan Chocolate Chip Pancakes For Two
Equipment
- metal heart shaped cookie cutter (optional, but fun for Valentine's Day, see notes*)
Ingredients
Vegan Buttermilk
- 3/4 cup non-dairy milk of choice I used soy
- 1 tsp apple cider vinegar
Pancake Batter
- 1 cup flour all-purpose
- 2 tsp baking powder
- 3 tbsp granulated sugar
- 2 tbsp vegetable oil can also use melted coconut oil
- 2 tsp vanilla extract
- 3 tbsp Just Egg see notes**
- 1/2 cup vegan chocolate chips
To Cook/Serve
- non-stick cooking spray optional
- maple syrup & vegan butter to serve
Instructions
- In a small bowl, stir together non-dairy milk and vinegar. Set aside for 5-10 minutes to allow to curdle.
- Meanwhile, get a medium bowl and whisk together the flour, baking powder and sugar. Add the oil, vanilla, vegan buttermilk mixture and Just Egg, and stir until just combined (some lumps are ok). Don't overmix. Set aside batter for 5-10 minutes.
- Heat a skillet over medium heat. Spray with non-stick cooking spray if needed. Drop 1/4 cup of batter into the pan for each pancake, sprinkling each pancake with 1 tbsp chocolate chips. Allow to cook until little bubbles form on the surface, 2-3 minutes. Flip and cook another 1-2 minutes, until golden on both sides.
- Plate pancakes on two plates and serve with maple syrup and vegan butter, if using. Enjoy with your significant other, or any other loved one who enjoys pancakes. Makes about 6-8 pancakes.
