These pancakes are the perfect breakfast in bed for two-whether it's on Valentine's Day, or any other morning with your loved one. Make them in heart shapes using a cookie cutter to be even more festive!

Ingredients
Vegan Buttermilk
3/4cupnon-dairy milk of choiceI used soy
1tspapple cider vinegar
Pancake Batter
1cupflourall-purpose
2tspbaking powder
3tbspgranulated sugar
2tbspvegetable oilcan also use melted coconut oil
2tspvanilla extract
3tbspJust Eggsee notes**
1/2cupvegan chocolate chips
To Cook/Serve
non-stick cooking sprayoptional
maple syrup & vegan butterto serve
Instructions
In a small bowl, stir together non-dairy milk and vinegar. Set aside for 5-10 minutes to allow to curdle.
Meanwhile, get a medium bowl and whisk together the flour, baking powder and sugar. Add the oil, vanilla, vegan buttermilk mixture and Just Egg, and stir until just combined (some lumps are ok). Don't overmix. Set aside batter for 5-10 minutes.
Heat a skillet over medium heat. Spray with non-stick cooking spray if needed. Drop 1/4 cup of batter into the pan for each pancake, sprinkling each pancake with 1 tbsp chocolate chips. Allow to cook until little bubbles form on the surface, 2-3 minutes. Flip and cook another 1-2 minutes, until golden on both sides.
Plate pancakes on two plates and serve with maple syrup and vegan butter, if using. Enjoy with your significant other, or any other loved one who enjoys pancakes. Makes about 6-8 pancakes.
Notes
*I found the easiest way to shape these pancakes into hearts is to cook the pancakes first, then cut them with the cookie cutter after you remove them from the pan (rather than putting the cutter into the pan and pouring the batter inside it, which felt a little more tedious and didn't exactly hold it's shape once I removed it). The "crusts" won't exactly be pretty, but you can eat them while you're plating up the nice pancakes for your honey, so ;)**If you don't have Just Egg, or can't find it in your store, you can also use ground flaxseed as an egg replacer. Just mix 1 tbsp ground flaxseed and 2-3 tbsp water together in a small bowl (it should be more gelatinous than liquidy in consistency), and set aside for 5-10 minutes so it can gel up. Use it in place of the Just Egg in this recipe.
