Today, I’m going to share with you a favorite recipe of mine: a classic zucchini bread.

And what a delicious recipe it is. This particular zucchini bread recipe has an extra added sweet spot: chocolate chips! Which makes it almost as much of a dessert as it is a breakfast food.

Make this zucchini bread in good health! Perhaps it will help you use up some of your garden’s zucchini harvest, or you can use some of your farmer’s market bounty.

In my experience, a warm slice of this zucchini bread goes best with a hot cup of tea and a great book.

Chip-licious Zucchini Bread

Equipment

  • Loaf pan
  • Parchment paper

Ingredients
  

  • 1 1/2 cups flour I prefer whole wheat flour
  • 1/2 tsp salt
  • 1 tsp baking soda
  • 3/4 tsp cinnamon
  • 1/3 cup agave nectar
  • 1/3 cup coconut oil, melted
  • 1/3 cup apple sauce
  • 2 cups zucchini, grated peel if desired
  • 1 cup vegan chocolate chips such as Enjoy Life brand

Instructions
 

  • Preheat oven to 375F. Line a 9×5 loaf pan with parchment paper and set aside.
  • In a medium bowl, whisk flour, salt, baking soda and cinnamon until combined.
  • In another smaller bowl, whisk the agave nectar, coconut oil and apple sauce. Make a well in the dry ingredients and add the wet ingredients, stirring until just combined.
  • Add grated zucchini and stir until it is evenly distributed. Stir in vegan chocolate chips.
  • Pour mixture into lined loaf pan and bake for 45-50 minutes, until a toothpick comes out clean.
  • Allow to cool slightly before slicing. Enjoy!
