As a vegan, it’s great to have staple recipes. Even better is to have quick and easy recipes that can be whipped up at a moment’s notice. This is one such recipe, which involves your favorite store-bought veggie burger and can be ready to eat in less than a half an hour.

The kind I used for this recipe, and that I can highly recommend, is the Dr. Praeger’s Perfect Burger. I just happened to get a pack a little while back when they were on sale for 99 cents at my grocery store, but they were definitely a great buy. With their meaty texture and thick structure, they are sturdy enough to hold up against the sauce and cheese we will be piling on top of them.

Personally, I think this could even be elevated into a parm sandwich. Just grab your favorite sub roll and toast it, then cut your finished parm burger down the middle and lay it on the roll. Smother it with more sauce, and è molto buono!

I hope you enjoy this recipe! Not only does it fit the profile of comfort food, it’s also really handy for a last-minute lunch; round out the meal with a nice side salad or a serving of whole wheat pasta.

Equipment

  • Rimmed baking sheet

Ingredients
  

  • 1 veggie burger I used Dr. Praeger Perfect Burger
  • 1/4 cup marinara sauce
  • 1/2 tsp Italian seasoning or as desired
  • 1/4 cup vegan mozzerella shreds

Instructions
 

  • Cook veggie burger according to package directions. If the package has an oven method, it'd be preferable to use that (not to mention it saves you the washing of a frying pan).
  • Meanwhile, stir the Italian seasoning into the marinara sauce. I thought 1/2 a teaspoon was plenty for the Italian seasoning, but if you want more or less feel free to adjust it to taste.
  • Once the veggie burger is cooked through, remove it from the oven but keep it on the same baking sheet. Spoon a liberal amount of your sauce on top and spread it, being sure to save enough for the other side. Carefully flip the burger, spooning the remaining sauce over it and making sure the sides are covered as well.
  • Sprinkle vegan cheese over the top, following with another sprinkle of Italian seasoning if desired.
  • Bake again at 350F for 5-7 minutes, until cheese is melty and sauce is hot. You could also broil it for a minute or two to get the same cheese-melting effect. Enjoy!

Notes

You could also make a delicious parm sandwich by slicing the veggie burger parm in half and laying it on a nice toasted sub roll.
