5 No-Cook Vegan Recipes For Hot Summer Days

The last thing you want to do when the weather is hot and sticky is turn on the oven; why would you want something adding extra heat to the house?
The good news? There are plenty of dishes you can whip up without using the oven (or even the stovetop). So here are 5 recipes of mine that you can whip up to cool you down.

1. Vegan Chickpea Salad For One
This one is ready to eat in just 10 minutes, and all you really need to use is a toaster for your bread (unless you like your bread untoasted). It’s a delicious version of vegan “tuna” salad and the perfect summer lunch!

2. Spinach Sun-Dried Tomato Muglet
While this isn’t precisely a “cool you off” recipe, it’s certainly a great breakfast that can be prepared without heating up the house (it only uses the microwave!) It’s especially good if you enjoy it alongside some chilled fruit.

3. Italian Style Cucumber Salad
This is amazing as a summer side dish or as a snack. The robust flavors, along with the cooling crunch of the cucumber, makes it perfect for hot summer days.

4. Banana Bread Overnight Oats
Here’s a great chilled recipe that you can actually meal prep for the week. Overnight oats are great for mornings that you don’t want a hot breakfast (and also want a breakfast that is just grab and eat).

5. Easy Vegan Chocolate PB Cups
If what you’re looking for is a sweet treat, these are just the thing! You just need a microwave to heat up the chocolate. For the ultimate frozen treat, leave them in the freezer for a bit longer than the recipe says. Like a peanut butter filled fudge pop!
