Refreshing 5 Minute Pumpkin Pie Smoothie
There’s something a bit nostalgic about pumpkin pie. One of the first things that comes to my mind when I think about Thanksgiving–besides a hearty plate of delicious leftovers–is pumpkin pie. It’s comforting, sweet and has all the flavors of fall.
But we don’t have to wait for November to get a taste of it, and it doesn’t have to take hours either. Not that this recipe in any way claims to be an exact replica of a pumpkin pie–it simply tastes damn close enough to be satisfying.
Not to mention that this smoothie is actually pretty healthy. It has pumpkin puree and banana, which is great for a fiber and potassium boost. Sweetening the smoothie with maple syrup adds another subtle layer of seasonal flavor. And a topping of non-dairy whipped cream makes this drink all the more decadent.
Just don’t be surprised if you end up having to share!
5 Minute Pumpkin Pie Smoothie
Equipment
- High-speed blender
Ingredients
- 1/2 cup canned pumpkin puree NOT pie mix, just plain pumpkin
- 1 medium banana frozen
- 1 cup almond milk or other non-dairy milk
- 1 tbsp maple syrup
- 1 tsp pumpkin pie spice
- 1/2 cup ice
- non-dairy whipped cream such as almond or coconut
- dust of cinnamon for garnish
Instructions
- Add pumpkin, banana, almond milk, maple syrup, pumpkin pie spice and ice to blender. Blend until smooth.
- Pour into your favorite glass, garnishing with non-dairy whipped cream and a dusting of cinnamon. Enjoy!
