What I Ate Wednesday #7: Fresh & Healthy Meal Prep

For this week’s meals, I employed the use of grocery delivery service Hungryroot. I honestly wasn’t super pleased with it overall, but that’s another story for another day I suppose.
I managed to throw together some pretty damn delicious healthy meals though, and this post will show you the ones I enjoyed on Wednesday.
Breakfast: I had a really yummy tofu scramble wrap, comprised of sauteed spinach and red onion, sundried tomatoes, and cooked cubed tofu. I wrapped that into a delicious whole wheat tortilla, and had with it a side of Lightlife Smart Bacon.

Morning Snack: I enjoyed a wild cherry Luna bar alongside an earl grey tea latte. I made the latte myself using my new handheld milk frother that I was given for Christmas. I must’ve been pretty excited to sit down and enjoy it, because I forgot to take a picture of it ? But trust me, it was a treat.

Lunch: I had a chickpea salad sandwich on a Silver Hills organic plain bagel (which was supposed to be sandwich bread, but hey, it works). I kept it simple with a slice of red onion, and toasted the bagel for some extra texture. It might be because I haven’t had a bagel in months, but I did get a little excited about having this sandwich on a bagel.
I had a simple spinach salad on the side–I got a massive bag of spinach from Hungryroot as my free veggie of the week. I topped it with some slices of red onion and a quick drizzle of oil and balsamic vinegar.
Dinner: I led the meal with another salad–I know, I’m a madman lol. The meal from Hungryroot was intended to be a sweet potato taco, but when I tried that the previous night I found that it just wasn’t my jam.
I decided to enjoy the rest of the sweet potato on the side with a little vegan butter and brown sugar–a very good decision–and sub in some refried beans on the tacos themselves.

Evening Snack: I made some sugar-free vegan chocolate pudding, and holy wow was it good. I did it using a flavor of Jell-o pudding mix that’s vegan and plain almond milk. Yes, it absolutely set properly (because I heated the milk before adding the powder)! And I can’t wait to make it again. I topped it with a little coconut whipped cream and a drizzle of chocolate syrup. Mmm!
And those were my meals! I’m working hard to incorporate more fresh fruits and veggies into my diet, and I think this post is a pretty good example of that! I hope you enjoyed it.
