What I Ate Wednesday #6: Easy Vegan Meals

Seeing as how I haven’t posted one of these since sometime in September, I figure it’s about time I shared another WIAW! In this post you might notice that I lean onto a few vegan products here and there (such as canned soup, and vegan egg substitutes), and these are very useful. But I always try to balance things out with fruits, vegetables and whole grains when I can. All part of a balanced diet, I suppose!

Breakfast: I started the day with lots of nice veggies. I had a Just Egg folded omelet, which I sliced open to put sauteed spinach inside. I also had a multigrain english muffin, toasted with sauteed peppers and onions on top (a fave of mine lately). I enjoyed my breakfast with a cup of coffee + Silk hazelnut creamer.

Morning Snack: I popped a couple Ozery Apple Cinnamon snack rounds in the toaster, then spread some peanut butter on them. It was my first time trying them, and it was a nice little snack.

Lunch: I made myself a sub sandwich, using Mrs. Goldfarb’s vegan turk’y–which is better than Lightlife, in my opinion. It had lettuce, tomato, red onion, banana peppers, and this vegan buffalo wing spreadable cheese that I attempted to make for a TikTok (not perfect, but definitely delicious). I made the same sub for lunch for several days in a row because I enjoyed it very much.

Afternoon Snack: After making batches of a couple different kinds of vegan cookies, I definitely needed to sample some 😉 So I enjoyed two peanut butter cookies and two buckeyes with a cup of peppermint tea.
Dinner: I wanted something warm and broth-related for dinner, and a can of vegan saus’ge gumbo definitely did the trick. On the side, I had some roasted asparagus drizzled with herbed basting oil–also a winner.


Evening Snack: I had 1/3 cup of one of my fave accidentally vegan snacks–Snyder’s buffalo wing pretzel pieces! I can’t recommend them enough, and I believe the jalapeno flavor is also accidentally vegan (for anyone interested).
That’s the post! I hope it finds you doing well. I scheduled it the week before Christmas actually, so I could hopefully enjoy some time off for the holidays 🙂
