Simple Vegan Sausage Breakfast Hash For One

This breakfast recipe isn’t quite as simple as throwing something in the microwave. But oh is it ever worth it!

The ingredients for this recipe are fairly simple and, once you’ve chopped and prepped everything, things should move just like clockwork.

You can pretty much use whatever vegan sausage you have, but if you’re looking for a recommendation, Sweet Earth’s chick’n & apple sausages are IT.

Every time I tested this recipe, this sausage made my kitchen smell absolutely amazing. And yes, they taste delicious as well. But Field Roast & Morningstar also offer options, among others. I’m just saying if given the choice, there’s a good chance I’d buy the Sweet Earth sausages again.

My recommendation is to prepare this hash on medium-low. If things seem to cook a little slow at first, just be patient. Attempting to prepare this hash on medium heat resulted in a slightly burnt hash, so be warned–unless you like it that way, of course.

I didn’t have it on hand, but this would probably be great with some fresh avocado slices on top, or perhaps some chopped herbs to brighten things up. I personally enjoyed it as-is, save for a little drizzle of ketchup. Do whatever makes you happy, and enjoy!

Vegan Sausage Breakfast Hash For One

This hash, which can be made with freshly shredded potato or frozen shredded hash browns, is the perfect breakfast for one! This meal is hearty, and has everything you'd expect from a filling savory breakfast. Grab a fork and dig in!

Equipment

  • Small cast iron or nonstick pan

Ingredients
  

  • 1 tbsp oil (+ 1 tsp for cooking Just egg)
  • 1 small or medium potato, shredded or 1 cup frozen shredded hash browns
  • 1/4 cup chopped yellow onion
  • 1/4 cup chopped bell pepper
  • 1 vegan sausage link, chopped (should be 1/2 cup) I used Sweet Earth Chick'n Apple sausages
  • salt and pepper to taste
  • 1/4 cup vegan cheese shreds of choice

Just Egg Mixture

  • 1/3 cup Just Egg
  • 1 tbsp nutritional yeast
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • salt and pepper to taste

Instructions
 

  • In a small bowl, whisk together the Just egg, nutritional yeast, garlic powder, smoked paprika, salt and pepper. Set aside.
  • Heat your pan (I've tried it with both cast iron and nonstick) over medium-low heat and add 1 tablespoon of oil. Test the heat with a few pieces of chopped onion–if it starts to sizzle, it's ready.
  • Add the onion, bell pepper and vegan sausage. Cook for 5-7 minutes, stirring semi-occasionally, until onions start to become translucent.
  • Add in shredded potatoes and toss everything together. Spread mixture in a flat, even layer with a spatula. Allow to cook for 15 minutes or until things start to become golden brown, stirring only once or twice in this time.
  • Move the potato mixture to one half of your pan, then add 1 teaspoon of oil to the empty side. Pour the Just egg mixture into the empty side and allow it to cook for 5-7 minutes, stirring occasionally, until set.
  • Break up the Just egg with your spatula and mix it into the potato mixture. Remove pan from heat and season to taste with salt and pepper. Top evenly with the vegan cheese shreds, then cover pan and allow cheese to melt. Serve and enjoy!
