This hash, which can be made with freshly shredded potato or frozen shredded hash browns, is the perfect breakfast for one! This meal is hearty, and has everything you'd expect from a filling savory breakfast. Grab a fork and dig in!
1small or medium potato, shreddedor 1 cup frozen shredded hash browns
1/4cupchopped yellow onion
1/4cupchopped bell pepper
1vegan sausage link, chopped (should be 1/2 cup)I used Sweet Earth Chick'n Apple sausages

1/4cupvegan cheese shreds of choice
Just Egg Mixture
1/3cupJust Egg
1tbspnutritional yeast
1tspgarlic powder
1tspsmoked paprika
salt and pepperto taste
Instructions
In a small bowl, whisk together the Just egg, nutritional yeast, garlic powder, smoked paprika, salt and pepper. Set aside.
Heat your pan (I've tried it with both cast iron and nonstick) over medium-low heat and add 1 tablespoon of oil. Test the heat with a few pieces of chopped onion--if it starts to sizzle, it's ready.
Add the onion, bell pepper and vegan sausage. Cook for 5-7 minutes, stirring semi-occasionally, until onions start to become translucent.
Add in shredded potatoes and toss everything together. Spread mixture in a flat, even layer with a spatula. Allow to cook for 15 minutes or until things start to become golden brown, stirring only once or twice in this time.
Move the potato mixture to one half of your pan, then add 1 teaspoon of oil to the empty side. Pour the Just egg mixture into the empty side and allow it to cook for 5-7 minutes, stirring occasionally, until set.
Break up the Just egg with your spatula and mix it into the potato mixture. Remove pan from heat and season to taste with salt and pepper. Top evenly with the vegan cheese shreds, then cover pan and allow cheese to melt. Serve and enjoy!
