Vegan Packed Lunches: Easy Lunch Prep For Back-To-School

Whether it’s for your kids or for yourself, the importance of a good lunch is not to be taken lightly.

Lunch is eaten at the peak of the day, and is the perfect time to replenish your nutrients and calories to avoid an afternoon slump.

Today, I’ll be giving you 4 different ideas for lunches, all of which are kid-friendly (and easy!). Get ready to prepare these great back-to-school lunches!

Lunch #1: Vegan Mummy Dogs

I also like to make these around Halloween, but honestly they’re so delicious that I make them year-round.

Not only are they cute (the eye sprinkles are optional but definitely adorable), they’re delicious!

All you need is a pack of vegan hot dogs and a tube of vegan crescent rolls. Cut the crescent rolls into strips, and wrap around the hot dogs (like a mummy).

Bake using the directions on the tube of crescent rolls. Enjoy them with ketchup or mustard, and a side of fruit for balance.

Lunch #2: Stuffed Peppers

I very much enjoy a good stuffed pepper, especially since they’re so quick to throw together. I packed this lunch with some pretzels, and a few peanut chews for a sweet treat.

I also like to serve the peppers with a drizzle of hot sauce, but that’s totally optional!

First, cook a 14 ounce tube of vegan sausage or beef in a pan on medium heat until cooked through. Remove from pan and set aside.

In the same pan, heat a tablespoon of oil and add one small chopped onion. You can chop and add the tops of the bell peppers here too.

Microwave (1) one 8.5 ounce pouch of rice (or cook enough rice to make around 1 cup cooked). I just find using a microwaveable pouch of rice saves you a lot of time.

Once the onion is translucent, add back the vegan meat, along with 14 ounces pizza sauce and the microwaved rice. Taste for salt, pepper and garlic powder.

Fill the bell peppers with the filling, then bake at 375F for 30 minutes until the peppers are soft. Top with vegan cheese if desired, then broil for 2-3 minutes until the cheese is melty. Enjoy!

Lunch #3: Vegan Turkey Pinwheels

Not all brands of vegan turkey are created equal. I find that my favorite brand is Tofurky, specifically the hickory smoked.

I used Follow Your Heart provolone as the cheese. In other applications, it also melts really well!

To make these, start with a tortilla (I used burrito size) and spread with vegan mayo. Drizzle a touch of oil and vinegar on the tortilla, then add an even layer of vegan turkey and vegan provolone (or whatever cheese you like!).

You might prefer some lettuce and tomato on this, but for mine I kept it simple: dill pickle and sliced onion. Roll the burrito tightly into a log, then slice into pinwheels.

I decided to serve these with some pizza pretzels and granola bar bites, for some added crunch.

Lunch #4: Vegan Pizza Bagel

The final lunch I want to show you is this: pepperoni pizza bagel! I greatly enjoyed Field Roast‘s vegan pepperoni on this dish.

The preparation is simple: slice your bagel in half first. Top with pizza sauce, shredded vegan mozzarella, and any desired toppings.

Then all you have to do is air-fry it at 375F for 7-10 minutes, until the cheese is melty and the bagel slightly toasted.

I decided to serve these pizza bagels with some fresh cubed cantaloupe, for some extra nutrition and a serving of fruit.
