Oatmeal raisin cookies often get smack-talked, hated on, and belittled. But I’m not exactly sure why.

Sure, chocolate chip cookies are delicious; many delicious varieties of cookies exist out there that satisfy the sweet tooth. But especially if you’re a raisin lover, oatmeal raisin is a super satisfying, fabulous type of cookie.

These oatmeal raisin cookies have the perfect chew, pack great sweetness from the raisins, and the oats provide a nice punch of fiber and protein.

As far as the process of making these cookies goes, it’s not very difficult. Apple sauce stands in as a fabulous egg replacer in this recipe, and vegetable oil replaces any need for expensive vegan butters.

You could have these cookies whipped up and ready to eat in less than half an hour! They are so chewy, gooey and delicious that you won’t even realize that they’re actually kinda healthy.

I used a two tablespoon cookie scoop to make these cookies, and then baked them for about 12-14 minutes.

If you wanted to make bigger cookies, I don’t see why you couldn’t; you’d probably just have to adjust the cook time.

I hope you enjoy these great cookies as much as my family did! They did not last long in my house.

Vegan Oatmeal Raisin Cookies

These chewy oatmeal cookies are vegan, dairy-free, egg-free and, most importantly, delicious! Using vegetable oil instead of vegan butter and apple sauce in place of the eggs, this recipe produces cookies that are not only cost-effective but also chewy and spectacular.

Ingredients
  

  • 1/4 cup granulated sugar
  • 1/4 cup brown sugar, packed
  • 1 cup all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 2/3 cup rolled oats
  • 1/4 cup apple sauce, plain
  • 1/4 cup vegetable oil
  • 1/3 cup raisins

Instructions
 

  • Preheat oven to 350F. Line a baking sheet with parchment paper.
  • In a large bowl, mix together the sugars, flour, baking powder, salt, and oats to combine. Add the apple sauce and vegetable oil and mix until all flour is moistened (it may seem a little dry at first; if it ends up being too dry add in a tablespoon more of apple sauce or so). Fold in the raisins.
  • Drop cookies two tablespoons in size on the parchment-lined sheet, two inches apart from each other. Bake the cookies for 14 minutes, or until golden brown on the bottom and dry on top. Allow to cool for a few minutes on the baking sheet before transferring to a cooling rack. Serve and enjoy!
