These chewy oatmeal cookies are vegan, dairy-free, egg-free and, most importantly, delicious! Using vegetable oil instead of vegan butter and apple sauce in place of the eggs, this recipe produces cookies that are not only cost-effective but also chewy and spectacular.
Preheat oven to 350F. Line a baking sheet with parchment paper.
In a large bowl, mix together the sugars, flour, baking powder, salt, and oats to combine. Add the apple sauce and vegetable oil and mix until all flour is moistened (it may seem a little dry at first; if it ends up being too dry add in a tablespoon more of apple sauce or so). Fold in the raisins.
Drop cookies two tablespoons in size on the parchment-lined sheet, two inches apart from each other. Bake the cookies for 14 minutes, or until golden brown on the bottom and dry on top. Allow to cool for a few minutes on the baking sheet before transferring to a cooling rack. Serve and enjoy!
