Vegan What I Eat In A Day: Plant-Based Splurge Meals

We are back with another Vegan WIEIAD post! I love making posts like these because it allows me to give you some meal inspiration, as well as share some great food with you.

Today’s meals aren’t particularly “healthy,” but that’s because I was having sort of a splurge day where I didn’t really count calories. I went out with some family on this particular day to celebrate some birthdays.

I hope you enjoy this day of meals, and perhaps get something out of it. Enjoy!

Breakfast: I whipped up a quick French toast for breakfast, the batter for which consisted of non-dairy milk, Just egg substitute, and cinnamon. I topped it with powdered sugar and syrup, and served it with more non-dairy milk. It was my first time having French toast in a while!

Snack: While we waited for our reservation time to come around, we sat around and chatted. While doing this, I enjoyed a Smirnoff ice and some hard pretzels.

Lunch: This place has the BEST hummus and baba ghanoush, which was served with fresh pita bread. They also give you a dinner roll to start.

My main entree was rigatoni and vegetables in a pomodoro sauce (I had to request no cheese on the pasta), which I was only able to eat about half of before I got full.

Snack: While everyone else had birthday cake, I actually had some lemon cupcakes leftover from a video I made, so I enjoyed one of those. The recipe is also on this website for my Lemon Cupcakes here!

Dinner: That evening, I got a little hungry (but not quite hungry enough for a full meal, y’know?) so I had some plant-based dumplings (the Weis brand in the green bag) in onion cups. I drizzled them with vegan mayo and sriracha. These have sort of been my guilty pleasure lately lol.


And that’s the day of meals! It seems that these types of posts are pretty popular, at the very least on TikTok. But I can understand why, it’s a great way to get vegan meal inspo at the tip of your fingers.
