Vegan What I Eat In A Day: Home-Cooked Meals

Welcome back to another What I Eat In A Day post! I really love making posts like these, so I hope you like them too!

It’s a really great way for me to give you ideas on what to eat as a vegan, as well as be mindful of what I’m eating in a given day.

In this WIEIAD post, I did a lot of home-cooked meals. I love to cook and get creative in the kitchen!

A lot of the recipes I make are also crowd-approved, which is why I like to share them on my social media as well (so you can try them!)

Well, without further ado, here is my day of meals:

Breakfast: I had a blueberry bagel that I got for free from Panera Bread for my birthday, which I put some cookie butter on (my current obsession). I also had some clementines and an energy drink.

Lunch: I made these really good stuffed peppers, using some leftover Chinese food rice and some vegan sausage I got from Grocery Outlet. I like my stuffed peppers with a little bit of hot sauce! It makes them ten times better.

Afternoon snack: I got a little snackish in the afternoon, so I had a single-serve bag of these salt and vinegar chips and a Gatorade.

Dinner: Dinner was a little experimental. I was trying to make squash parmesan, but when I tried to fry the squash the breadcrumbs had a little trouble sticking. It still tasted really good though! Also the breadcrumbs were made out of failed sourdough loaves that I made.

Evening snack: I’ve been really into making pretzels and other baked goods lately. I don’t know if this is my *favorite* pretzel recipe, but they still tasted pretty good. I made some vegan “honey” mustard to go on the side. I also had a glass of fresh-squeezed lemon-limeade with it.
