Typical Day Of Easy & Delicious Vegan Food (Meals + Snacks)
If you’re new to veganism, you might find it hard to figure out just what to eat on a day to day basis. Even if you aren’t so new to a vegan diet, meal planning can still be tricky.
That’s why I like making “what I eat in a day” type content-and would like to do it more, if I’m honest.
It’s a great way for me to give you a snapshot of just what a typical day looks like for me: my lazy/go-to meals, what I get when I order in, snacks I enjoy and even things I come up with when I’m playing around in the kitchen.
Here’s what my day of meals looked like this past Tuesday:
Breakfast: I made one of my favorite easy staples, which was a vegan breakfast sandwich. Sometimes I use Just Egg, and sometimes I use tofu. Today, I used a chickpea flour omelette, melted some vegan cheddar shreds on it, and enjoyed it on a toasted english muffin. I probably would’ve had some vegan bacon on it as well, if I’d remembered to… I also had a cup of apple sauce on the side.
Lunch: We ordered in from a local restaurant (it isn’t fully vegan, but has some vegan options). I got a mediterranean veggie wrap, which had zucchini, eggplant, peppers, onions and also hummus on it. It is very good, and very filling as well. I got some fries on the side too.
Afternoon snack: It was a chilly day, so I felt like having a cozy snack of tea and cookies. The Partake Pumpkin Spice cookies were a discounted item at Grocery Outlet (a store which, if you’re vegan in any capacity, you should know about). The tea was loose leaf, and I took it with stevia as I usually do.
Later in the afternoon I also had a Yerbae energy drink. I don’t drink these all too often, but the strawberry watermelon flavor was actually really good.
Dinner: I absolutely loved the dinner I had, and I was lucky enough to have leftovers of it. I made vegan tostadas, which were only served on tostadas because I had tostadas to use up… They were comprised of taco-seasoned Boca crumbles, brown rice, beans, mashed avocado, vegan sour cream, salsa and taco sauce. This dish was absolutely fantastic. I’d be down to make it again. 10/10.
Evening snack: I got excited because I realized I had a little bit of vegan ice cream left in the freezer. I also just so happened to have some of this root beer dessert sauce on hand, so I drizzled some on the inside of the cup as well as on top. It was delicious and awesome.

I would also say that sometimes it is helpful to meal prep for a few days in advance so that, even if you get busy or caught up with other things, you’re still guaranteed good meals and adequate nutrition.
