Buffalo cauliflower is an old favorite recipe of mine. And not just because I’m a hot sauce fanatic–and I truly am a hot sauce fanatic. But also because buffalo wings were a thing I enjoyed in my pre-vegan days. Buffalo cauliflower just means I get to have it again without the animal cruelty.

Buffalo chicken wraps were also a thing I liked to have way back when. To me, it only seemed natural to take the success of buffalo cauliflower and apply it to this old favorite as well.

As far as condiments go, you can buy vegan blue cheese or you can opt to make your own. Daiya has a nice vegan blue cheese that I really enjoy. However, you can also make blue cheese from scratch using crumbled tofu, in lieu of the actual cheese.

Pile your wrap with the buffalo cauliflower, and then fresh lettuce and tomato as desired. I prefer to use a whole wheat tortilla for it’s nutrition content, but use whatever tortilla you like. Or use a gluten-free tortilla, like these (which also appear to be vegan-friendly).

Ingredients
  

  • 1 recipe Brave Little Vegan's Buffalo Cauliflower link in "Notes" section
  • 4 tortillas of choice
  • shredded romaine lettuce
  • sliced tomato
  • sliced red onion
  • hot sauce to taste

Vegan "Blue Cheese" Dressing

  • 1/2 cup crumbled firm tofu
  • 2/3 cup vegan mayo like Vegenaise or Hellmann's Vegan
  • 1 tbsp nutritional yeast
  • 1 tsp apple cider vinegar

Instructions
 

  • You'll want to start by preparing your buffalo cauliflower (recipe linked in notes). While that's in the oven, you can slice your onion/tomato and prep your other ingredients.
  • To prepare the vegan blue cheese: carefully mix tofu, mayo, nutritional yeast and apple cider vinegar in a small bowl to combine. Be careful not to mash your tofu crumbles, since you still want it to resemble blue cheese. Cover and refrigerate until ready to use.
  • To assemble wraps: lay one wrap on your working surface. Spread the middle third of the wrap with the desired amount of your blue cheese. Add desired amount of the buffalo cauliflower on top of the dressing, then lettuce tomato and onion. Top with desired amount of extra hot sauce, if using. Fold one half of wrap over the filling and roll firmly. Slice in half and serve!
