Fantastic Veganized Cream of Broccoli Soup
There’s truly nothing like a nice, warm cup of soup on a chilly winter day. Sometimes you’re in the mood for something more of a broth, like minestrone or vegetable medley. A lot of these can be easily found canned in the grocery store (such as a precious few Progresso varieties that don’t contain beef broth). Those are nice when you don’t want to spend the day slaving over a pot of soup.
But some days you want something a little creamier, which can be harder for us vegans to find. And some days you don’t mind spending a little extra time making some homemade, delicious soup. When these two days coincide, you can make the recipe I’m about to give you.
It would be quite difficult to not feel cozy with a nice warm mug of this vegan cream of broccoli soup. Perhaps you would be cuddled on the couch with a warm blanket, a fireplace crackling, a furry friend curled up at your side.
I don’t know about you, but that definitely sounds like the perfect afternoon to me.
So if it’s a soup day today, welcome it. Embrace it. If it’s not, print this recipe out and tuck it away for safe keeping; you never know when the perfect soup day will come along.
Vegan Cream of Broccoli Soup
Ingredients
- 2 tbsp vegan butter such as Earth Balance
- 6 cloves fresh garlic, minced
- 3 medium sweet potatoes, peeled and rough-chopped
- 4 cups fresh broccoli, cut into florets
- 4 cups vegetable broth
- 1 tsp salt
- 1/4 cup nutritional yeast
- 1/2 cup non-dairy milk such as almond or oat
- salt and pepper to taste
Instructions
- Heat a large saucepan over medium-low, Add vegan butter and allow to melt. Then, add the garlic and cook for 1 minute, or until slightly golden. Add the sweet potatoes and stir to coat.
- Add broccoli, vegetable broth, salt and nutritional yeast. Bring this mixture to a boil, then reduce the heat to low. Cover saucepan and cook for about 15-20 minutes, until the vegetables are tender.
- At this point, remove two cups of the broccoli and place it in a medium soup pot, draining as much broth from it as possible. Set aside for now.
- Now stir the non-dairy milk into the broth/sweet potato mixture. Carefully spoon this mixture into a blender in batches, and blend until smooth. Pour blended soup in soup pot with set aside broccoli.
- Heat soup to serving temperature, adding desired amount of salt and pepper to taste. Enjoy!
