Heat a large saucepan over medium-low, Add vegan butter and allow to melt. Then, add the garlic and cook for 1 minute, or until slightly golden. Add the sweet potatoes and stir to coat.
Add broccoli, vegetable broth, salt and nutritional yeast. Bring this mixture to a boil, then reduce the heat to low. Cover saucepan and cook for about 15-20 minutes, until the vegetables are tender.
At this point, remove two cups of the broccoli and place it in a medium soup pot, draining as much broth from it as possible. Set aside for now.
Now stir the non-dairy milk into the broth/sweet potato mixture. Carefully spoon this mixture into a blender in batches, and blend until smooth. Pour blended soup in soup pot with set aside broccoli.
Heat soup to serving temperature, adding desired amount of salt and pepper to taste. Enjoy!
