7 Unique Recipes To Switch Up Your Thanksgiving Meal

Turkey, green bean casserole, and pumpkin pie? All cornerstones of a classic Thanksgiving meal. And yes, it’s easy enough to make veganized versions of these dishes (tofurky, anyone?)

But sometimes, you just want to try something different. I think this is okay too; after all, even the most closely held traditions had to start somewhere.

To that end, I’ve compiled a list below of some seasonal favorites with a twist–or, perhaps, some soon-to-be new favorites that you wouldn’t have thought to include.

On to the roundup!

1. Zucchini Bay Biscuits

This spinoff of Red Lobster’s Cheddar Bay Biscuits includes shredded zucchini for a nice boost of veggies, but has the garlic buttery flavor of those classic biscuits (and yes, you really can’t taste the zucchini).

While there are veggies involved, I wouldn’t call these “healthy.” But they’ve been on my Thanksgiving table for the past few years now, and even my picky sister enjoys them!

2. Vegan Baked Cauliflower & Cheeze

Something I didn’t realize until recently is that mac & cheese is a Thanksgiving favorite for many. If you already vibe with the holiday classic, why not try a remix using cauliflower instead of macaroni? Or, hey, you could add both if you really wanted to bump up the carbs–I’m sure it would taste good either way.

3. Roasted Pumpkin Lasagna Boats (Klara’s Life)

This recipe not only sounds yummy, but it looks festive to boot! Not to mention I’m a fan of lentil bolognese as much as the next guy. I would probably bump mine up with some pasta as well (because carbs).

4. Simple Balsamic Zucchini Boats

This could work as a side dish or as a main, depending on how hungry you are. Stuff it with wild rice or, if you’re feeling adventurous, stuff it with bread stuffing (I haven’t personally tried that, but it sounds like a vibe).

5. Vegan Pot Pie w/Puffed Pastry (Clean Green Simple)

There’s nothing quite like a pot pie on a winter day. If that sounds like your vibe, try it out this Thursday! You could even add some vegan turkey as well for a festive twist (and some added protein).

6. Brown Sugar Cinnamon Acorn Squash

This squash recipe has all the Fall flavors to rival your sweet potato casserole. Maybe there’s no marshmallows, sure, but when did vegan butter, brown sugar and cinnamon ever hurt anyone?

7. Vegan Spinach Dip (NoRecipes)

I’ve probably made this recipe dozens of times and it is a winner. Though I should mention I usually leave out the water chestnuts. If you’re looking for a tasty appetizer that will wow your guests, this is one dip that will please your crowd. Serve with tortilla chips, crudites, or fresh baguettes.
