6 Easy Vegan Recipes To Kick Your Veganuary Off Right

For as long as I’ve known of it, I’ve been sort of fond of veganuary. It offers a nice little “trial period” for anyone interested in taking up a more plant-based lifestyle (and hopefully continuing it through February and beyond!)
Vegans like myself can also take the time to share our favorite tips, tricks and recipes for those just getting started.
And to that end, I’d like to share some of my favorite recipes, ones that are easy to prepare and also have easily accessible ingredients. You might try one new recipe a day to test the waters, or more if you’re particularly strapped for meal ideas.
1. Buffalo Cauliflower
Buffalo cauliflower seems to be a relatively popular dish, and for good reason. Though it isn’t an exact replica of hot wings, it’s a delicious substitute if you happen to like cauliflower.
As far as dipping sauce, a tried-and-true favorite of mine is Daiya’s vegan blue cheese. However, if you aren’t able to find this, I found this recipe that uses cashews!
While you’re at it, you can even make this a full meal (or packable work lunch) by turning it into a wrap.
2. Cheesy Cream of Broccoli Soup
So long as you don’t mind breaking out the blender, why not make some cream of broccoli soup? This kind of soup tends to be seen as a comforting favorite, and with my recipe you can have a creamy bowl of soup that’s also completely vegan.
3. Veggie Burger Parm
If you’re looking for a mostly hands-off meal that can be made in 30 minutes or less, perhaps you might opt for this veggie burger parm. I would recommend a meatier type of burger such as this one. Serve it over a bed of spaghetti and/or a side salad for a complete, and delicious, weeknight dinner!
4. Zucchini Pizza Bites
For a light lunch or perhaps a snack to share, these quick pizza bites are a crowd pleaser–and a fun way to get in a serving of veggies. Bump up the protein with some vegan be’f crumbles (such as Gardein) or saus’ge.
5. Spicy Hash Brown Taco Wrap
This recipe definitely has a Taco Bell-type feel to it, but probably a little healthier and still delicious. And you can find just about all the ingredients in your standard supermarket!
My favorite vegan sour cream to use with it is Tofutti, though you can use your favorite or omit it altogether.
6. Cool Ranch Tofu Scramble
If you need a replacement for your scrambled egg breakfast–and you’re not averse to tofu–tofu scramble is officially your new best friend. It is so delicious and it fills your breakfast void. My recipe takes a ranch-y spin on the original favorite, employing flavorful spices to take it to the next level.
