4 Easy Recipes To Use That Block of Tofu In Your Fridge

Because today, I’m going to share four different recipes with you that all share tofu as the star ingredient. And no, it’s not just tofu scramble.
There’s a variety here that includes breakfast, lunch and dinner recipes–one is even a condiment.

Recipe #1: Itty Bitty Zucchini Manicotti
I’ve made this recipe many times, and it’s always delicious. These bite-sized faux manicotti are low-carb, gluten free, and–yes, you guessed it–use tofu in place of the ricotta cheese.
All you have to do is mash the tofu, season it up a bit, and bam! Instant ricotta cheese replacer. Roll it into mandoline-sliced zucchini, top with sauce and cheese and bake. Deliciously cheesy, and protein packed!
Recipe #2: Cool Ranch Tofu Scramble
Okay, okay, so you know at least one of these recipes had to be a tofu scramble. But this one is really wonderful because of its unusual flavor profile. Everybody loves ranch, right?
It’s amazing how just seasoning can change an entire dish, so if your usual tofu scramble just won’t cut it this time, try out my cool ranch version!
You could also mix things up even further, by having your tofu scramble in a wrap or on toast.
Recipe #3: Simple Tofu Blue Cheese
If you need an easy condiment to slap together to go with your buffalo cauliflower, why not make this tofu-inclusive vegan blue cheese?
I originally made this to go along with my Spicy Buffalo Cauliflower Wraps, but it also works as a standalone condiment for salads, veggies and more. And–bonus–it’ll use up some of your tofu!
Recipe #4: Easy Vegan Personal Pizza Dough
Yes, that’s right: you can make delicious, 4 ingredient pizza dough with tofu! It’s so easy, packs a protein punch, and takes less than an hour from start to finish.
Top it with whatever toppings your heart desires–spinach, meatless crumbles, buffalo chick’n, anything you like!
You won’t even realize you’re eating tofu as the crust (and getting approximately 9 grams of protein, at that).
