What I Ate Wednesday #3: Cleaning Out My Pantry

Time for another WIAW! I’ve been embarking on a little pantry clean-out lately, meaning I’ve been cooking up a few things that aren’t necessarily in my wheelhouse–such as bean flour muffins (recipe coming eventually).

I’m finding a lot of things in there that I didn’t even remember I had, so that’s pretty cool. Like shelf-stable gnocchi (score, am I right?) and matzo ball soup mix.

So, here are my eats from Monday!

Breakfast: I made bean flour banana muffins! I used the one cup of pinto beans I had in my cupboard, roasted them and blended them into flour. The fact that these were as good as they were should not be allowed. I had two of them with some vegan butter, along with a glass of unsweetened almond milk. The (approximate) recipe will be coming soon.

Morning Snack: I had some Tofurky hickory smoked slices with some cubes of Daiya jalepeno havarti. I squirted some dijon mustard on the Tofurky, then rolled the cheese up inside it. 10/10 delicious.

Lunch: A failed bowl of matzo ball soup. Hell, it still tasted awesome. And at least I got the box of mix out of my pantry, amiright?

Afternoon Snack: I just had half of this Chobani probiotic drink, in the pineapple turmeric flavor. If you know me, you know that I am all about probiotics. However, I’m not usually a huge fan of turmeric, but it wasn’t that bad in this drink. These Chobani drinks however are, like kombucha, an acquired taste, just in case you’re thinking of trying these 😉

Dinner: I didn’t get a chance to take a picture of dinner *frowny face.* But it was essentially some gnocchi in a vegan cream sauce, some sauteed zucchini with onions and garlic, and some Gardein crabless cakes which I had with cocktail sauce.

Evening Snack: I had some of this Arctic Zero non-dairy ice cream with some coconut whip on top. This is a nice little treat to have when you don’t feel like breaking out the blender.
