Vegan What I Eat In A Day: Reaching My Protein Goals

Welcome back to another what I eat in a day post! I’ve been really enjoying making content like this lately, not just here on this blog but also on my YouTube channel.

I’ve been trying to focus on protein and fiber goals recently, as in the latter half of 2025 I became a bit of a “junk food vegan,” which there’s nothing wrong with btw, I just would like to feel a little bit healthier this year.

And so, without further ado, here is my day of meals:

Breakfast: for a couple of days this week for breakfast, I have been enjoying these banana strawberry protein smoothies. I hesitate to even call it a smoothie because it takes more like a strawberry milkshake! It’s actually so good and I look forward to it every morning. The berry protein powder has greens in it as well, and was a great find at Ollie’s for $9.99.

Lunch: for lunch, I had some of these burger-style vegan fries. I used an Impossible burger patty as the “meat” for the fries and vegan mozzarella shreds as the cheese (Daiya brand I believe). I also made a burger sauce with minced dill pickles, vegan mayo, ketchup and mustard.

Dinner: for dinner, me and my dad went to Olive Garden. There are an okay amount of vegan options at Olive Garden, but my favorite thing to get is the breadsticks with traditional marinara + the minestrone soup. The beans in the soup are a source of protein, as is the pasta, and the breadsticks are a source of happiness 🙂

Evening Snacks: for some snacks in the evening, I had two of these seaweed snacks (they’re one of my favorite snacks at the moment). I also had some of this gelatin-free Jello and an I.Q. bar (which I think tastes kind of like a candy bar, but that’s just me).
