Vegan What I Eat in a Day: Building Healthy Habits

Hi there! Welcome back to another Vegan What I Eat in a Day post. I really enjoy making posts like these because not only does it allow me to share some of my favorite meals from the week, it also gives you some vegan meal inspiration.

Without further ado, let’s get into today’s meals.

Breakfast: For breakfast, I had a chickpea scramble wrap. I’ll be posting this recipe in the near future (I’ve been testing it all week!) so stay tuned for that one. It’s really delicious, and nutritious!

I also had a Ripple Kids plant-based milk carton. I got a deal on them at Grocery Outlet (it was a 4-pack for $2.99 I believe). Really creamy and nice, plus an 8 gram of protein addition to my breakfast.

Lunch: I had some delicious veggie kimbap with a spicy mayo (made with 2 tsp Buldak sauce and 2 tbsp vegan mayo). It was so good. I also had 4 steamed veggie dumplings (they had plant-based meat in them) on the side.

Afternoon Snacks: I spaced these snacks out over the afternoon. First, I had a vegan protein brownie (made using a boxed vegan brownie mix, 1/3 cup apple sauce and 2 scoops of vegan chocolate protein powder). I drizzled it with 1 tablespoon of cookie butter and, man, I could not recommend it more.

I got a hankering for something crunchy around 3 or 4pm, so I had a seaweed snack (I love seaweed snacks). Then before dinner, I was craving something sweet again so I made an iced pistachio latte (the pistachio flavor was completely dairy-free from Jordan’s Skinny Syrups).

Dinner: For dinner, I had a vegan chicken parm sandwich on a protein bagel I made. I used 1/4 cup of marinara sauce, 1 Daiya mozzarella stick, and a serving of Tindle popcorn chicken made from plants (another score from Grocery Outlet).

I enjoyed my dinner with an Alpine Blast Poppi. I have to brag about the price I got them at, they had 4 packs of this flavor Poppi for $1.99 at Grocery Outlet. I love Poppi, so I could not pass it up.

Evening Snack: I had some of this great dip I made (based off a recipe by MaKayla Food + Fitness on TikTok) called Fiesta Poolside Dip. It was kind of like a fajita dip.

I replaced the chicken with vegan chicken, the laughing cow with 1 tbsp of vegan cream cheese, the greek yogurt with vegan plain unsweetened yogurt, and the ranch seasoning with vegan ranch seasoning I made from scratch (comment if you want that recipe!).

I also really like the Pure Protein chips, though these Frank’s RedHot chips weren’t my favorite flavor. I really like the Sweet Chili and the Barbecue. Most of their flavors are vegan (save for the sour cream and onion flavor). I highly recommend them for smashing your protein goals!

(It’s not pictured, but I also had some veggies and hummus later in the night lol)


And that’s the day of meals! I’ve been trying to eat healthier lately as well as up my protein and fiber intake–you know how things can get around the holidays, not exactly the healthiest time of year for a lot of us.
