What I Eat In a Day As a Vegan (Lazy Meals On The Weekend)
I often find it entertaining (and many times useful) to see what other vegans and vegetarians eat during a typical day.
Something about the pretty pictures and also the creativity that’s out there makes “what i eat in a day” content very appealing to me.
It also is, at least in my case, a very honest look into my daily life. Some days of meals are certainly better than others, and really all we as vegans can do is try to hit the nutrition mark as best we can–I guess that goes for anyone, really.
But nonetheless, today was a rather delicious set of meals that I didn’t mind at all. Here’s what I ate throughout the day on Saturday:
Breakfast: Today’s breakfast was more of a grab-and-go breakfast. I enjoyed an Incogmeato Chick’n & Waffle breakfast sandwich, which was a great deal I found at Grocery Outlet.
I love that it boasts over 20 grams of protein, and that I can just pop it right in the microwave. I also enjoyed some clementines on the side.
Lunch: For a video, I prepared a vegan version of the widely popular “Marry Me Chicken,” using seitan in place of the chicken. I love seitan for its versatility, and it certainly served its purpose in this dish.
I’ve been wanting to try this for a while so I’m very glad I finally did. And let me tell you, it was so freaking good. The video will be forthcoming on my YouTube channel, so you can see how I made it!
Afternoon Snack: I was feeling just a little hungry for an afternoon nosh, so I settled on a banana with peanut butter.
This is such a classic snack for me, and nothing goes better than bananas with peanut butter (except maybe jelly with peanut butter, on a pb&j sandwich).
Dinner: Some family and I went out for dinner to a local restaurant. While this particular establishment doesn’t have a ton of vegan options, I was still able to get a bowl of pasta with sauce and an order of french fries, as well as some of their house bread.
And that’s a full day of meals! This was probably not my best day if I’m being honest, as you’ll notice it was pretty carb-forward.
I also did have several servings of protein throughout the day, but could have done more. Perhaps a handful of cashews or a bottled protein shake, looking back, would have been a fitting midmorning or evening snack.
That being said, this is just a typical day of me trying my best, which is really all we can do 🙂
